Highly developed in the first half of the 20th century and largely composed of table wines, this vineyard has shrunk significantly with the decline in wine consumption. Today, a few dozen hectares of vines remain under the Protected Geographical Indication (PGI) designation (formerly Vin de Pays). The area is experiencing slight growth with some new plantings. The geographical area concerned corresponds to the low Pliocene-Pleistacene plateaus that form the geological foundation of the region.

 

100% Pinot Noir

 

The soil is clayey-limestone, loamy.

 

This vine was planted with Pinot Noir by Paul Giboulot, Emmanuel's father, over 50 years ago. Tall and wide, it is grassy. It has been organically farmed since 1970, and entirely biodynamic since 1996.

 

The hand-harvested grapes are 100% sorted and destemmed. Maceration and alcoholic fermentation take place in open vats for approximately 3 weeks. The free-run wine and first pressing are blended and poured into barrels. The wine is aged for 12 months in old barrels to express the terroir and fruitiness of the Pinot Noir.

 

This wine is best enjoyed with charcuterie, pâtés en croûte, and cheeses such as raclette, Comté, or mature goat cheese. It can be a surprising pairing with grilled fish.
