Highly developed in the first half of the 20th century and largely composed of table wines, this vineyard has shrunk significantly with the decline in wine consumption. Today, a few dozen hectares of vines remain under the Protected Geographical Indication (PGI) designation (formerly Vin de Pays). The area is experiencing slight growth with some new plantings. The geographical area concerned corresponds to the low Pliocene-Pleistocene plateaus that form the geological foundation of the region.
100% Pinot Beurot. Beurot is the endangered Burgundy variety of Pinot Gris. It takes its name from the monks' habit. It differs from Pinot Noir in the gray color of its berries.
The "Marnes de Bresse" substrate is covered with "Sables et Argiles de Chagny," which consists of fine micatized and calcareous materials with sand lenses.
This vine was planted with Pinot Beurot by Paul Giboulot, Emmanuel's father, and is 35 years old on average. It is a tall, wide vine, grassed and managed organically since 1970 and biodynamically since 1996.
The whole grapes are pressed and cold-set for approximately 24 hours. The clear must is fermented in oak barrels previously used for several wines to preserve its purity and minerality. The resulting wine was aged on lees for 12 months before being bottled.
You can enjoy this wine with shellfish, a good veal blanquette, or small waterfowl. Or simply as an aperitif with crudités.
