TERRES BEAUJOLAISES
AOP BEAUJOLAIS
Certified Organic
The Beaujolais appellation extends from the Mâconnais border in the north to Villefranche-sur-Saône in the south, with the Pierres Dorées sector, where limestone soils originate from the Bajocian period (200 million years ago). The soils are granitic in the rest of the appellation, with a variety originating from the Hercynian chain, formed approximately 250 million years ago.
100% Gamay
The soil is composed of schists and porphyries.
The exposure is southeast. Our Terres Beaujolaises cuvée comes from a plot located in the commune of Bully.
The grapes are harvested by hand. After sorting, some of the grapes are destemmed, while the rest are vatted in whole bunches. Alcoholic fermentation and maceration last approximately three weeks in vats, during which punching down and pumping over occur successively depending on the desired extraction for the vintage. This traditional Burgundy winemaking approach produces very airy wines, crafted with fluidity and dynamism. Aging in oak barrels of at least four wines lasts an average of 12 to 24 months before bottling.
Salted meats, white meats, fatty fish or fish in sauce, root vegetables, and cheeses.
