The Appellation d'Origine Contrôlée (Controlled Designation of Origin) was established in 1939. It has also been one of the most important production sites for Crémant de Bourgogne since the early 19th century.
100% Chardonnay
This wine is grown on clay-limestone soil on gravel.
The plot is located in the commune of Rully.
The whole grapes are pressed and cold-set for approximately 24 hours. The clear must is fermented in oak barrels previously used for several wines to preserve all its minerality. It is aged on lees for 18 months before bottling.
You can enjoy this wine with chicken in cream sauce, pike, veal, or quail with foie gras. Serve this wine between 12 and 14°C and allow it to open in the glass during the meal to appreciate the evolution of all its dimensions.
