Beaune "Lulunne" is located in the hollow of a small valley steeped in history and energy, a few meters from the spring of the same name. This site, inhabited since prehistoric times, was once the camp of a Roman legion.
100% Pinot Noir
The soil is clayey-limestone, loamy, well-drained over gravel. Silt and white marl are found in the upper half of the plot.
Several traces of construction steles and numerous small remains attest to the occupation of the site up to the 4th century. Nearly a century old, the vineyard is located at the top of the Beaune hillside on the edge of Pommard and extends to the edge of the forest.
The grapes are hand-harvested, sorted, and partially destemmed. Alcoholic fermentation takes place in truncated cone-shaped vats. Aromas, tannins, and color are extracted through traditional pumping over and punching down (no yeast or enzymes). Vatting lasts an average of three weeks. The free-run wine and the first pressing are blended and then transferred to barrels. Aging for 12 months takes place in barrels previously used for three or more wines, allowing the purity and minerality specific to each origin to be expressed.
