On the hillside of the Beaune mountain range, above the Premier Crus, lies the ancient Côtes de Beaune vineyard. This rare appellation covers an area of ​​only 52 hectares, one of the smallest in Burgundy. Although their names are similar, the Côte de Beaune appellation should not be confused with that of Côtes de Beaune Villages (3,222 hectares). Indeed, the productions concerned are quite distinct: the former concerns only Beaune production, and the latter concerns 14 other villages along the coast.

 

100% Pinot Noir

 

The soil is clay-limestone, well-drained on gravel.

 

The plot is located on the Montagne de Beaune and is divided into two parts, the first planted in 1962 and the second in the early 2000s. Cultivated using low-growing vines, with 10,000 vines per hectare, it is cultivated biodynamically.

 

The grapes, hand-harvested and sorted, are 100% destemmed. Fermentation begins quickly in truncated cone-shaped vats. Extraction of aromas, tannins, and color is natural (no yeasting, enzyme addition, or excessive heating) and is achieved through traditional pumping over and punching down. Vatting lasts one lunar cycle. Free-run wine and first pressing are blended. Aging for 18 months takes place in barrels previously used for several wines.

 

You can enjoy the qualities of this wine with meats in sauce (red or white), raw fish (like sushi), but also with dry goat cheese or creamy Époisses.
