On the hillside of the Beaune Mountains, above the Premier Crus, lies the ancient Côtes de Beaune vineyard. This rare appellation covers an area of only 52 hectares, one of the smallest in Burgundy. Although their names are similar, the Côte de Beaune appellation should not be confused with that of Côtes de Beaune Villages (3,222 hectares). Indeed, the productions concerned are quite distinct: the former concerns only Beaune production, and the latter, that of 14 other villages along the coast.
100% Chardonnay
The soil is characterized by the presence of very white limestone sandstone ("lava" in local dialect) and nodules containing barium inclusions.
The vineyard is located on the Beaune Mountains, in the hollow of a small valley. This 40-year-old vine faces the town of Beaune and is exposed to the rising sun. It faces the opposite slope where the Combe d'Eve plot is located. It is located above the AOC Beaune Premier Cru "Les Bressandes".
The grapes are whole-bunch pressed, then the juices are cold-set for approximately 24 hours. The clear must is fermented in oak barrels previously used for several wines to preserve purity and minerality. The resulting wine is aged on lees for 15 months before bottling.
You can enjoy this wine with a fish terrine, seafood fricassee, fish poached in beurre blanc, or with cheeses such as Epoisses or Soumaintrain.
