AOP BOURGOGNE HAUTES-CÔTES DE NUITS
Certified organic and biodynamic
Located on the best slopes of the plateau overlooking the Côte de Nuits to the west, this appellation is planted in 19 communes of the Côte d'Or department at an altitude of 300-400 meters. This vineyard is very old; a vineyard donation to Meuilley is mentioned in a document dating back to the 8th century.
100% Pinot Noir
Clay-limestone soil in the first two-thirds, followed by silt and white marl in the upper third of the plot. The vines face due south.
Devastated by the phylloxera crisis, this region redeveloped through the Hautes-Côtes de Nuits appellation, established by decree in 1961. This milestone marked the recognition of the personality of the wines produced from its hillsides. Our vineyard, planted in 1976, is located 5 km from Nuits-Saint-Georges on the hillside of the commune of Meuilley.
The grapes, hand-harvested and sorted, are largely destemmed. Alcoholic fermentation takes place in open wooden vats. The extraction of aromas, tannins, and color is natural (no yeasting, enzyme addition, or heating) and is achieved through traditional pumping over and punching down. Vatting lasted 23 days. The free-run wine and first pressing were blended, settled, and transferred to barrels. Aging for 18 months takes place in barrels previously used for three or more wines to express the purity and minerality specific to each origin.
This wine will pair wonderfully with a fine charcuterie board, grilled meats, or an exotic dish. Its complexity will be a delight.
