Saint-Romain is a commune in the Côte de Beaune, located in the extension of the Auxey-Duresses vineyard. Sheltered by spectacular cliffs, the vines occupy the south/southeast and north/northeast slopes of a fairly steep passage carved into the hillside. Rising from an altitude of 280 meters to nearly 450 meters, it is a relatively small appellation (69 hectares of white wines and 38 hectares of red wines).
100% Pinot Noir
The soil is clay-limestone. The plot is composed of clay and white marl.
Our plot is located in the upper part of the valley that leads to Saint-Romain-le-Haut, facing due south. It was planted in 1975.
The grapes are hand-harvested, sorted, and 50% destemmed. Alcoholic fermentation takes place in open wooden vats. Extraction of aromas, tannins, and color is achieved through traditional pumping over and punching down (no yeast or enzymes). Vatting lasts approximately 3 weeks. The free-run wine and first pressing are blended and then transferred to barrels. The 12-month aging process takes place in barrels previously used for 3 or more wines, allowing the purity and minerality specific to each origin to be expressed.
This wine pairs wonderfully with poultry, slightly spicy or even exotic dishes, and creamy cheeses (Soumaintrain, Camembert, Citeaux).
