This is a clay-limestone soil.
The vines are located in the Côte Chalonnaise vineyard.
The grapes are hand-harvested, sorted, and partially destemmed. Alcoholic fermentation takes place in open wooden vats. The extraction of aromas, tannins, and color is natural and is achieved through traditional pumping over and punching down. Vatting lasts 3 to 4 weeks. The free-run wine and first pressing were blended and then transferred to barrels. The wine is aged for 12 months in vats to preserve the freshness, fruitiness, and delicacy of the Pinot Noir.
This is a wine that beautifully expresses red fruits; its dynamic palate and fluidity make it a pleasure to drink. Red Burgundy pairs very well with white or red meats and grilled vegetables. It is a red that can, surprisingly, go very well with the world of fish.
